Synopsis of Experiment

These experiments will measure the effect that fiber will have on the rate that food travels through the digestive system, and the degree of adsorption of bile salts.

Effect of Dietary Fiber on Transit Time

Three healthy males will consume standard meals, standard meals with soluble fiber, and standard meals with insoluble fibers. All meals have identical calories and nutrients. Transit time for each of the types of meals will be estimated by determining the amount of time it takes for ingested radiopaque markers to pass through GI tract.

Effect of Dietary Fiber on Bile Acid Adsorption by Food Particles

Two meals, with different amounts of fiber, were prepared with identical nutrients and calories. Each meal type was dried and ground. The size of the particles was the same for each meal. Bile acids were combined with the dried and ground meal. The amount of bile acid in solution (bile acid not bound to meal particles) was measured by spectrophotometry. This will be used to estimate the amount of bile adsorbed by fibers.
